Black Rice Kanji Recipe

Preparing kanji (rice porridge) with black rice is a #nutritious and delicious option. #BlackRice, also known as forbidden rice, is a highly nutritious grain with a nutty flavor. Here's a basic #recipe for making #blackricekanji:

Ingredients:

  • 1/2 cup black rice

  • 4-5 cups water (adjust for desired consistency)

  • Salt to taste

  • Optional toppings: grated coconut, chopped nuts, jaggery, or honey for sweetness

Instructions:

  1. Rinse the Black Rice: Place the black rice in a fine-mesh strainer and rinse it under cold running water until the water runs clear. This removes excess starch and prevents the porridge from becoming too thick.

  2. Soak the Rice (optional): Soaking the rice for a few hours or overnight can reduce cooking time. If you choose to soak it, drain and rinse before cooking.

  3. Cooking the Kanji:

    • In a large saucepan or rice cooker, combine the rinsed black rice and water. You can start with 4 cups of water and add more later if needed.

    • Bring the mixture to a boil over high heat.

    • Once it boils, reduce the heat to low and let it simmer, covered, for about 45 minutes to 1 hour. Stir occasionally to prevent sticking and add more water if the porridge becomes too thick.

    • Continue cooking until the black rice is soft and the mixture reaches your desired consistency. Some people like a thicker porridge, while others prefer it thinner.


  1. Seasoning: Add salt to taste. You can also sweeten the kanji by adding jaggery or honey if you prefer a sweeter version. Adjust the sweetness to your liking.

  2. Toppings: Serve the black rice kanji hot, garnished with grated coconut, chopped nuts (like cashews or almonds), or other toppings of your choice.

  3. Enjoy: Black rice kanji can be enjoyed as a comforting and nutritious breakfast or as a light meal. It's especially popular in South and Southeast Asian cuisines.
